    With the “stock configuration”, if I disable Pipewire and don’t do ANYTHING else, sound disappears.

    I do know that ALSA sound CAN still work IF the pulseaudio daemon is working and if a few tweaks are set up, based on the recent “init-diversity” stuff I was working on; @calciumsodium put together a REALLY NICE set up steps to guarantee good ALSA sound; apparently here, if Pipewire is turned off there are not any currently configured features for the ALSA sound setup to work as is.
