My goal is to have the CMST icon in the tray at boot where I can go and enable the VPN as needed.
As @vitforlinux mentioned, he is using connman-gtk instead of CMST. This interface puts itself in system tray and shows on desktop panel. Now, I am not sure if it works with IceWM, which is the default WM for antiX.
But on the flip side, if you use CMST, ones you define your connection and it is successfully connecting, it will no longer start the window on the desktop. Just you will see it in the panel tray.
In general, you raised here some non-trivial questions, which have nothing to do with your being relatively new to antiX.

If you do decide to go for Network Manager then be aware that nm-applet, which you specify in the heading of this thread, is something to think about, because it is known to cause your panel to use about 50% of cpu after some time of running, depending what panel you use. It was originally designed for Gnome. Increasing system tray height may resolve this issue but I have not found a good common ground for this. But again, this issue depends on what panel you use. I use LXQT-panel and this cpu issue was pronounced in all my installs. Eventually I replaced nm-applet with nm-tray, which does not have this issue.
