I just checked my system and the selected repo was in my neighbour’s country, so I changed it to one in my country.
Now, when I use the updater, it shows me this:

I’ve tried clicking ‘Restore original APT sources’ in the Repo Manager, but it throws an error. Could not download original APT files.

I would check that the antiX repo is still active.
Try using Repo Manager and choose another eg University of Crete/GreecePhilosophers have interpreted the world in many ways; the point is to change it.

I quickly had a look at another repo (Cologne) to see if there was a kernel update waiting there, and found about 27 updates waiting (vs 0 for my local mirror – //mxlinux.mirrors.uk2.net/packages/antix/trixie). None of them was a kernel update though.
Now gone back to local mirror, I reckon it will all work through the system eventually (I don’t get the impression anything can really be done except to trim “bad” repos from the list). I will wait.
In my experience it is just a fact of life with mirror lists in general – the only “solution” is for everyone to jump on the “fastest” one, which defeats the purpose of having a list in the first place.

Ah OK, MIRror MONitor – cheers! Mine looks fine, so nothing to be done but wait.
I tried deselecting and selecting some mirrors from the list, but now they have disappeared and I cannot restore the original APT sources due to the above error I get when doing so.
I also tried selecting Greece-Crete, but when I apply it, it defaults to Vietnam-Hanoi.

Unless you know what you are doing you can completely blow up your machine by happily toggling repo settings. Be EXTREMELY careful or you may get to start all over. As for Mirrors to use, that’s less problematic. But in all cases be Careful… oh did I mention be careful?

How can I resolve this error and restore the original repository list/sources?
Or did I mess things up by playing around with this?

We have all blown this up at one time or another… it happens. It can be a mess. If you start by running sudo apt update in terminal and get no errors- you might be okay. From there you can try an upgrade if upgrades are recommended. But, be aware every step you take away from your baseline is new territory and ‘could’ provide unexpected results or it might work just fine.
You can try getting the original settings off your live USB and put them back in place. If you don’t have that, I would use a LLM AI like Perplexity (Free version will work) to guide me through diagnostics and repair. The thing to know (remember) about Linux is: its great strength is- you can do almost anything you want with it; its greatest weakness is- you can do almost anything you want with it. 😉

antix kernels will not update if you just use ‘sudo apt upgrade’. You have to manually install the kernel version you want (and manually uninstall versions you no longer want).

OK cheers, I thought that limitation only applied to live systems (been reading about live USB updater – I’ll get the hang of this!). I have the update:
linux-image-6.6.137-antix.1-amd64-smp - Linux kernel, version 6.6.137-antix.1-amd64-smpso leave it with me, waiting for a backup to complete. Incidentally I used this instead of step 7:
dpkg -l|grep -e '-image-' -e '-headers-'because I am used to dpkg from ancient times 😉
